Well, it's fall, and we're broke right now, so that means black bean soup. It's super cheap, healthy, and delicious. It's best if you have a food processor or blender, but will be just fine without.
Here's what you need:
3 cans of black beans (two drained)
1/2 medium onion, diced
2 cloves garlic (more of less to taste), minced
1/2 cup broth of your choice (we used vegetable broth)
1 1/2 Tbsp minced jalapeno
1/4 cup packed chopped fresh cilantro, more for garnishing
1 tsp cinnamon
1 tsp cumin
avocado, sour cream, and cheddar cheese to garnish, if you like
Drain two of the three cans of beans, and put the undrained can in a cooking pot. Put the drained beans, onion, garlic, jalapeno, and 1/4 cup of the broth into a food processor.
Add the blended mixture, whole beans, and spices to the pot
Stir until mixed. Once the soup gets warm, add the chopped cilantro
Once the whole thing is heated through, pour into bowls and add garnish if you like:

Soup! I actually bought some black beans the over the weekend to make some sort of chili/soup out of now that it's finally chilly around here.
